Great substitute for potato chips.  Can you get any healthier?  Light and crispy.  Perfect for late night snack!

handful of kale (I buy it by the bag already washed and chopped)
2 T. olive oil
pinch kosher salt

Preaheat oven to 425 degrees.
Pick through the kale and remove any pieces of large ribs
Line rimmed baking sheet with aluminum foil.
Place baking rack on baking sheet.

Place kale in a large bowl and blot off any moisture
Pour olive oil over kale
Mix the kale and olive oil with your hands
Place on baking rack – some will fall through – that’s ok.  Try to get it in a single layer.
Sprinkle to taste lightly with kosher salt

Roast for 5 minutes
Remove pan from oven and turn over any pieces that are very dark
Continue roasting for2- 3 more minutes and check kale for doneness (watch closely at this point)

Remove from oven and let sit on counter for 5 minutes.
Add more salt if desired
Pour in a large, dry bowl and enjoy!
