These crunch snacks are award winners adapted from Arman Liew. Try them and you’ll see why!!! The original recipe called for bars, but Gianna likes to use a small cookie scoop and make small balls. This is half the recipe, so feel free to double.

1-1/2 cup Rice Krispies
3/4 cup (116 grams) Lily’s sugarless bittersweet chocolate chips
1/2 cup (132 grans) peanut or almond butter, or your fav nut butter
1/4 cup (62 grams) maple syrup or honey
2 tablespoons (30 grams) coconut oil

Add all ingredients except Krispies in oven-proof glass bowl
Microwave for 30 seconds, then stir
Microwave for 15 seconds, then stir again
Microwave for a few seconds longer if needed

Whisk ingredients together
Add Krispies and thoroughly mix with a spoon
(Mixture could look a little wet, but will firm up upon cooling

Use a small cookie scoop and scoop out balls and drop on parchment paper
Continue until all mixture is used
Place tray in refrigerator for at least an hour before eating

Store chilled balls in ziploc bag or airtight container in refrigerator

Freezes well
