This recipe is from Olena Osipov, and is genius. Whoever thought oven baked chicken breast could be made juicy without marinating??

2 lbs. boneless & skinless chicken breasts
1 tablespoon oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon oregano
1/2 teaspoon salt

Preheat oven to 450 degrees
Line a sheet pan with heavy duty aluminum foil, or use a medium baking dish
Add chicken, drizzle both sides with oil and sprinkle with spices

Bake, uncovered, in the oven, for 12-25 minutes, or until instant read thermometer inserted in thickest part reads 150 degrees F. Start checking at 13 minutes. Do not overcook!

Remove from oven and cover with a lid, or tightly fold up the foil around the chicken, and let rest 10 minutes. The temperature will continue to rise to 165 degrees.

Slice against the grain and drizzle with juices.
