This is the same soup that is served up every day in the U.S. Senate. It has been a Congressional tradition for centuries.

1 ham bone
7 cups water
1 teaspoon salt

1 lb. dried navy beans, rinsed and picked over
2 tablespoons butter
1 onion, chopped
2 cloves garlic, chopped (or 1/2 teaspoon garlic powder)
1/2 teaspoon ginger powder (minimizes stomach gas)

salt and pepper to taste to finish

chopped parsley for garnish

Place ham bone and water in the Instant Pot.
Cover, seal, and set on manual high for 15 minutes
Let natural release for 10 minutes to make a broth.

This next step is optional:
You can either (1) add the butter, onions and garlic to the pot, or (2) saute onion in a pan with the butter until they just start to brown, add garlic and saute another 30 seconds, then add to the pot.
Add beans and garlic powder, and stir.

Add lid, seal, and set on manual high for 30 minutes.

Let natural release for 10-60 minutes.
Remove ham bone, dice up ham, and return to pot.
