I tried roasting bacon in the oven because I like to cook a whole package and keep it in the freezer for reheating one piece at a time.  Couldn’t believe how much better it tastes!  It stays flat and so much more of the fat cooks out.  The best part is that it is hands off.  Great when making breakfast for a crowd!

Preheat oven to 400 degrees
Line a large baking sheet with foil for easy clean up.
Use a long cooling rack, or 2 smaller sized ones to fit into the baking sheet
Place the bacon strips perpendicular across the grids

Roast for 17-21 minutes until nice and brown
Remove from oven and blot the top with a paper towel
Remove bacon by grabbing the end and lifting up
If it sticks a little, you may have to lift underneath with your other hand so it doesn’t break

Bend corner of foil and pour grease into a bowl to use later or discard
If you are cooking additional bacon, always pour off the grease from the previous batch
