My sister in law makes these, and we are always excited when she brings them to dinner.  They are better than crab cakes!!

1 – 10 oz pkg frozen chopped spinach, thawed squeezed dry
1 T. olive oil
1/2 – cup crumbled feta cheese
2 T. finely chopped shallot or onion (or 1 teaspoon dried onion flakes)
1 – clove garlic, minced
1-1/2 – tsp dried oregano
1/4 – cup Italian Seasoned Bread Crumbs (see note below for gluten free)
1/4 – tsp black Pepper
2 – eggs, slightly beaten

Mix all ingredients together well
Shape into 4 – 1/2 thick Burgers.
Fry in 1/4 cup Olive Oil, about 3-4 minutes per side until browned and heated through.
