Can also adapt to make Greek meatballs – See Note

  • 1 lb lean ground turkey
  • 3 garlic cloves, pressed
  • 1/4 cup finely grated Parmesan cheese
  • 2 t. dried onion flakes, or 2 T.  finely chopped onion
  • 3 T. parsley, chopped fine
  • 3/4 teaspoon salt
  • 12 teaspoon pepper
  • 1/2 teaspoon oregano
  • 1 egg, beaten
  • 2 tablespoons milk
  • 12 cup dry or fresh breadcrumbs
    (for gluten free, process one piece of GF bread (without crust)  in small food processor)

    Heat oven to 400 degrees

Line baking sheet with foil or parchment
Lightly oil foil or use cooking spray

Mix all ingredients in a large mixing bowl

Use small cookie scoop to measure out mixture to baking sheet, or roll to 1″ diameter

Bake in oven 12-14 minutes, until internal temperature reaches 160 degrees
Remove from oven
I like to let them sit for 15 minutes to dry out a little before using

 

NOTE:  For Greek meatballs, omit Parm, increase oregano to 1 teaspoon and add 1/2 teaspoon cumin
