I love to make this chili and freeze half, so I can have it any time I want.  So delicious and easy!

1 lb. ground meat (any type)
1 medium onion, chopped
2 t. chili powder
1 t. salt
1 small can tomato paste
1 – 14 oz. can diced petite tomatoes
2 cans red kidney beans (including liquid)
1 can black beans, rinsed
1 c. water, plus more as needed
1/2 c. cooked quinoa

Heat large dutch oven over medium high heat.
Cook onion in oil until lightly browned.  Remove onion to plate with slotted spoon.
Place ground meat in dutch oven and brown.

Return onions to pan with meat and add rest of ingredients.
Bring to boil, then reduce heat and let simmer 45 minutes, uncovered.
Add more water as necessary.
Stir in quinoa and serve
