I have tried almost every waffle out there, including cornmeal waffles, and this recipe remains my favorite.  Yields 8 double waffles.

2 -1/2  c. all purpose flour (300 g.)
1 T. plus 1 t. baking powder
1 t. plus small pinch kosher salt
1 t. sugar
2 large eggs, beaten
2 -1/2 c. milk
1-1/2 t. vanilla
1/2 c. melted butter

Preheat waffle iron.
In a large bowl, lightly whisk flour, baking powder, salt, and sugar, to combine
In another bowl, lightly whisk eggs, milk, vanilla and butter
Add liquid ingredients to dry ingredients, and whisk until just combined.  Don’t over-whisk
Lightly spray waffle iron with Pam, if not a “seasoned”, no stick iron
Cook until golden
Important:  If not eating immediately,  place the cooked waffles on a cooling rack so the steam won’t make them soggy
