My mother found this recipe years ago, and it remains one of our favorite casseroles today.  It’s so darn good.  Great for company lunch, as well as dinner.  The best part is that it makes it’s own crust!

2 1/2 c. cooked chicken or turkey, cut into 3/4 inch cubes, or bite-sized pieces
1  –  16 – 20 oz. package frozen mixed vegetables, thawed and patted dry
    (NOTE: I prefer the packages that include broccoli, water chestnuts, carrots)
1 c.  milk
1 can cream of chicken soup
1 c.  milk
1 c. Bisquick
1/2 t. poultry seasoning
1 stick butter, melted

Preheat oven to 350 degrees
Spray 2 1/2 qt. casserole dish with Pam

Evenly spread chicken pieces over bottom of casserole dish
Evenly place vegetables over chicken
Whisk 1 c. milk with soup and evenly pour over vegetables
Whisk 1 c. milk, Bisquick, poultry seasoning, and butter, and evenly pour over soup mixture

Place casserole in oven and bake for one hour, or until the crust is golden brown

Let cool at least 20 minutes (don’t cheat – it’s hot!)

Cut into squares and scoop out with a spatula.
