My husband is half Greek, so any Greek food I cook comes under close scrutiny.  He loves this chicken souvlaki, served with the tzatziki sauce, and then loves it again the next day in gyros.  An easy recipe, with tons of flavor.

Souvlaki Marinade:

1 tablespoon chopped garlic
1 t. dried dill
1 t. oregano
1 t. basil
1 1/2 T. lemon juice
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper, if desired
1 package chicken tenders (around 8-10 count)

Combine all but chicken in large ziploc bag and mix together.
Add chicken and squish around so chicken is totally covered by marinade.
Let chicken marinate in refrigerator 1-6 hours.

Tzatziki Sauce:

1/4 c.  cucumber, small dice (this is optional if you don’t have it)
1 t. dried dill
1 c.  plain yogurt
2 teaspoons lemon juice
1/4 t. salt

Mix tzatsiki ingredients, cover, and keep in refrigerator.

Heat grill pan (or skillet) over stove top to medium high, until thoroughly hot. (No need to oil if using nonstick.)
Take chicken out of bag and place directly on grill.  Try to keep marinade and herbs on chicken.
Grill for about 3 minutes, until halfway done.
Flip to other side and grill an additional 2-3 minutes, until just done.
(These cook fast, so do not overcook.)  Remove chicken to serving platter.
Lightly tent with aluminum foil, and let chicken rest a few minutes, then serve while hot with individual bowls of tzatziki sauce.
