These pancakes are gluten free and high protein thanks to the cottage cheese, and actually contribute nutrition to your health!

1/2 c. low fat cottage cheese
1/2 t. vanilla
1/2 ripe banana
1 egg
sprinkle of cinnamon
1/2 t. baking powder
1/3 c. oatmeal

If you are using a personal blender, add the oatmeal last as it will mix better.

Add all ingredients in a blender and blend until mixture is almost smooth.
Heat ceramic or non-stick pan on medium low (I use 2 pans)
Run a stick of butter around the pan to lightly grease it, then place aside
Pour 3-4 pancakes onto pan and cook about 3-4 minutes
Lift pancake and, using the butter stick again to grease underneath, flip the pancake
Cook additional 3-4 minutes, depending on how hot your pan is

NOTES: Keep an eye on the heat of the pan. If too hot, pancakes will burn
Pancakes will remain a little custardy inside which is what you want
If you want thicker pancakes, add a little more batter once pancakes are just set
