Quinoa has a bitter outer shell, and unless it has already been pre-rinsed, you need to soak it in water for 20 minutes, drain, and rinse.  I prefer Eden Foods organic quinoa because it is a little larger and results in a more defined texture.

1 c. Eden Foods organic quinoa (my favorite brand, or any brand you prefer)
1 – 1/4 c. water
Pinch of salt

Soak quinoa in water for 20 minutes, drain and rinse well under running water

Bring water and salt to a boil
Add quinoa, cover, and simmer on very low heat for 12 minutes

Check quinoa for doneness; if needed, cook another minute or so
When desired texture is reached, use immediately, or  spread quinoa on a baking sheet to cool
This helps to stop the cooking process so it doesn’t become mushy
