My favorite part of going to the fair is the funnel cake!  This funnel cake is even better, and fun to make with your kids or guests.  This recipe will make 4-5 cakes.

You will need an actual funnel with an opening of 7/16″.

1 egg
2/3 c. milk
4 t. sugar
1 c. flour
2/3 t. baking powder
pinch of salt
canola or peanut oil for deep frying

2-3 cups of confectioners sugar for dusting

Heat your oil to 350 degrees.

Whisk all ingredients (except confectioners sugar) in a bowl until smooth.  You may have to play around with the consistency of the batter a little.  If it’s too thick, add a touch more milk, and if it’s too thin, add a little more flour.  The first time is a little bit of trial and error until you get the feeling of the consistency you want coming out of the funnel.

Place your finger over the tip of the funnel and use a half cup measuring cup to scoop out the batter and pour in the funnel
Hold the funnel about an inch over the hot oil and remove your finger
Move the funnel over the oil in all directions, filling up the spaces

NOTE:  If you leave too many open spaces in the cake, it will break when you lift it.

Let the cake cook until lightly browned on the bottom, about a minute
Using tongs and a spatula, gently flip the cake and fry until lightly browned on the other side

Drain on paper towels
Put a half cup of confectioners sugar in a large strainer and generously sift over cake
