I just threw the ingredients in the Instant Pot, and was so surprised at the best applesauce I had ever had.  I don’t get excited about applesauce, but this is so good, you can put some Reddi Whip  on top and feel like you are eating apple pie – without the crust!

5 large gala or fuji apples (2-1/2 lbs)
1/2 t. cinnamon
1/2 c. water

Peel, core, and cut apples in medium sized chunks

Pour water in bottom of Instant Pot
Add apples and cinnamon, and stir

Close cover, and set Instant Pot on manual high for 10 minutes (may have to adjust time for different varieties
Turn off and naturally release pressure for 2 minutes, then quick release

Remove cover, and, using pot holders, remove inside pot to wire rack to cool some
Use a potato masher and mash apples, then whip  with a dinner fork
I like to leave my applesauce a little chunky, but if you like it smooth, use an immersion blender

Serve warm or chill

NOTE:  If you don’t serve this right away, for thicker applesauce, you can push applesauce to one side of pot, and set pot at an angle and let liquids settle to other side and pour off.
