This is a great way to cook bacon (both regular and turkey).  I like to cook a whole pound at a time and freeze it.  Then, I can pull out a piece or two for my husband’s breakfast and reheat it in the microwave.  Saves so much time and mess in the morning!

1 pound of good quality bacon

Preheat oven to 400 degrees.
Line rimmed baking sheet with aluminum foil.
Place long rack inside baking dish

Place bacon side by side on rack inside of baking sheet (I usually fit half a pound)
Place on middle shelf in preheated oven.

Cook for 15-20 minutes, until desired doneness.  But start watching closely after 15 minutes.  You don’t want it to burn.

Remove sheet from oven and use tongs to transfer bacon to paper towels.
Blot tops of bacon with paper towels to remove any unwanted bacon fat.  Don’t worry too much here because more will come out when you reheat it in the microwave.

Place bacon in rectangle plastic container and freeze.

To reheat:  Place 1-2 pieces of frozen bacon on paper towel and fold sides over.
Place in microwave and I usually heat it for 45 seconds on 8 power.
