This is my favorite vegetable soup. And the barley is a bonus. Definitely comfort food.

1 lb. ground turkey or beef
1 medium chopped onion or shallot
1 46 oz. can V-8 juice
2 c. water
1 c. barley
1 14 oz can diced tomatoes
2 cloves minced garlic
2 bay leaves, torn in half
2 t. basil
2 beef boullion cubes or 2 t. granules
1 t. oregano
1 t. hot chili powder
1 t. black pepper
2 lb. frozen mixed vegetables

· Brown meat and onion.
· Add all ingredients except vegetables.
· Cover and simmer 50 minutes.
· Add vegetables, return to boil, and simmer, uncovered, 20 minutes or until vegetables are done.
