Roasted cauliflower is one of life’s simple pleasures.  It is so easy to prepare, and the taste is so delicious.  A little bit of kosher salt on top really highlights the sweet caramelization of the cauliflower.  Beware – it’s addictive!

1 head cauliflower
2-3 T. olive oil or canola oil
1/2 to 1 t. kosher salt

Preheat oven to 450 degrees
Cut cauliflower into small florets.  Arrange cauliflower in single layer on roasting sheet lined with foil.
Drizzle oil over cauliflower, and mix with your hands
Lightly sprinkle with kosher salt

Roast 20-30 minutes, until fork tender and browned, stirring after 10 minutes.

Should get spottily browned.  Good browning makes the flavor pop.

Remove from oven when done and sprinkle with a tad more kosher salt, if desired.  Taste before and during seasoning.
