One day my husband’s boss came to our house for dinner.  He brought the most amazing oatmeal cookies.  Would you believe he would NOT share his recipe with me???  So after he left, I immediately began to dissect his cookies to find out what made them so good.  I think it is the kosher salt and a little bit of coconut.   I then ramped them up by soaking the raisins in dark rum.  Wow!

½ + 3 T. butter
¼ c. dark brown sugar
¼ c. light brown sugar
1/2 c. white sugar
1 egg, lightly beaten
1 t. vanilla

1 c. flour
½ t. baking powder
½ t. baking soda
½ t. kosher salt
(1/8 t. cinnamon, if desired)
1 ½ c. rolled oats

¾ c. chopped walnuts
1  1/4 c. raisins, dried cherries, or craisins
¼ c. coconut

2 T. dark rum, if desired

If desired, soak raisins, cherries, or craisins in 2 T. dark rum overnight, or cover with wrap and microwave for 30 seconds on high.

Preheat oven to 350 degrees. Place parchment paper on baking sheet.

In large bowl, whisk dry ingredients together.

Place butter and sugars in large mixing bowl, and cream for 1 minute on low speed. Add egg and vanilla and mix until well blended.  Scrape down sides.

On slow speed, slowly add dry ingredients. (If you don’t have a stand mixer, mix dry ingredients in by hand.)  Mix just until blended. Add rest of ingredients and mix a few seconds.   Finish mixing by hand until fully incorporated, scraping down sides.

Scoop dough with teaspoon and drop on ungreased baking sheet.

Bake on middle rack for 10-12 minutes, until lightly golden

Cool on baking sheet 2 minutes, then transfer to rack to cool completely.
