This is an adaption of my original oatmeal cookie recipe.  My daughter is always looking for ways to make healthier food for her 2 young children, so I created this recipe.   It is very moist.  I like this version as well as the original!

½  c. butter
¼ c. light brown sugar
¼ c. white sugar
1 medium apple, 1/4″ dice (about 1 cup)
1 egg, lightly beaten
1 t. vanilla

1 c. whole wheat pastry flour
½ t. baking powder
½ t. baking soda
½ t. kosher salt
1 ½ c. rolled oats

¾ c. chopped walnuts
1  1/4 c. raisins (or craisins), if desired
¼ c. coconut

Preheat oven to 350 degrees. Place parchment paper on baking sheet.

In large bowl, whisk dry ingredients together.

Place butter and sugars in large mixing bowl, and cream on low speed.  Add  egg and vanilla, and mix until well blended.  Scrape down sides. Add diced apples and blend.

On slow speed (or by hand if you don’t have a stand mixer), slowly add dry ingredients. Mix just until blended. Add  rest of ingredients and mix a few seconds.  Finish mixing by hand until fully incorporated.

Scoop dough with teaspoon and drop on ungreased baking sheet.

Bake on middle rack for 10-12 minutes, until lightly golden.

Let cool on baking sheet 2 minutes, then transfer to rack to cool completely.

When fully cooled, either freeze or keep in airtight container.
