This is just plain comfort food.  A great complement to any meal, especially pork.

1 large sweet apple (such as fuji or gala, peeled and thinly sliced
¼ c. chopped shallots
1/2 small head green cabbage, cored, and thinly sliced
3 large carrots, julienned (very thin sticks), 4” long
1 teaspoons olive oil
2 t. cider vinegar
½ t. salt
½ t. ginger
3/4 cup low-sodium chicken broth

Heat oil over moderate heat in dutch oven. And shallots, apples , 1/2 t. dried sage. Cook, stirring occasionally, until the mixture is soft and golden brown, 4 to 5 minutes.
Add the cabbage, carrots, vinegar, ginger, and salt. Continue cooking until the cabbage and carrots begin to soften, about 5 minutes.
Add the broth . Cover and cook until vegetables are tender – 15-25 minutes.
